I don’t know about you – but to me home made rice pudding is one of my all fav puddings of all seasons!! In particular of course these more breezy, chilly days do give it an extra oomph factor with it being a comfort food for those not so warm months ahead. Why not treat yourself to a cheeky tuck-in ………..?
Here are the main ingredients my Mum and I use in our kitchen, but obviously you can add extras such as cinnamon or nutmeg, maybe a touch of strawberry jam?
Make sure you have a pint of milk wholly for the use of this recipe – don’t run out of your cuppa amount!! Add 1 large dollop of butter to the pan before you put the milk in to make sure the rice won’t stick to the sides 🙂
Pop 50g of pudding rice into the pan for 2 people or double to serve 4 etc…… Then add 2-3 tsps of sugar in about 5 mins before the end to add that tang of sweetness!
Simmering time can be between 30 mins to 40 depending on which pudding rice you buy whether it be Tesco, Sainsburys and so forth. Alternatively use a slow cooker for an hour and a half to two hours 🙂
